Happy Valentine's Day/Whipped Strawberry Cake

Happy Valentine's Day everyone! I want to express my love for today and every day for the people I love the most with food because food is my love language. I know most people don't like Valentine's day, but I like to think of it as spending time with people I love. It doesn't necessarily mean having a significant other. It can be a day for self-love care or showing you're love to others by doing a small gesture like giving them a call or telling them that you love and miss them.

1 made our first cake together with my son. He loves strawberries so what better cake to make than a Strawberry Cake. It was easy to follow this recipe I found online from Martha Stewart "strawberry cake" https://www.marthastewart.com/336020/strawberry-cake

but I' altered the recipe to my liking and added less sugar and more milk. I included whipped cream inside the cake and on the top and added fresh st. I added more cool whip cream in a zip lock bag and made my own piping and added the word "love" to fit the theme of the cake. I hope you enjoy the berry delicious cake as much as we did!


Whipped Strawberry Cake

Ingredient Checklist:

  • 1 stick of unsalted butter, softened,

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup plus 2 tablespoons sugar

  • 2 large egg

  • 1/2 cup milk

  • 1 teaspoon pure vanilla extract

  • 1 pound strawberries, hulled and halved. Save 10 pieces for topping

  • 1 Cool Whip

  • Red food coloring

  • 1 sandwich bag

Cooking instructions:

  • Step 1 Preheat oven to 350 degrees. Butter a 10-inch pie plate. Sift flour, baking powder, and salt together into a medium bowl.

  • Step 2 Put butter and 3/4 cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; mix in egg, milk, and vanilla.

  • Step 3 Reduce speed to low; gradually mix in flour mixture. Transfer batter to buttered pie plate. Arrange strawberries on top of the batter, cut sides down and as close together as possible.

  • Step 4 Bake cake 5 minutes. Bake until the cake is golden brown and firm to the touch, Do the toothpick trick. Let cool in pie plate on a wire rack. Cut into wedges and add whipped cream on top.

  • Step 5 Add the remaining strawberries on top. 2 scoops of cool whop and ad one drop of red food coloring. Mix together and add in a sandwich bag and cut a small hole in the corner. Pip the word "love" on top.

  • Step 6 Enjoy a slice!



I did add whole milk and added one cup instead of half and next time I want to try a yogurt cake to make it a little healthier, but no one's counting today right?!


When I first told him to help me he was so excited! He was a great helper from washing the strawberries for me to helping me pour the ingredients into the mixer. The cake turned out to be just right. He couldn't wait and we ate it for breakfast along with his breakfast food. It wasn't too sweet and with the whipped cream we added gives it an extra love =) I hope your day is extra sweet today because you deserve it!!!
